Summer Grilling Recipes for Father’s Day
Father’s Day is here in Virginia, and it’s time to bring out the grill! Father’s Day is about honoring your father, and what better way to do that than grilling some food and getting the family together? Throwing a cookout on Father’s Day is expected, with your dad often leading as the grill-master. A cookout usually means finding the right recipes for the event in question. Luckily, the staff at Hickerson Brothers are more than just trained and trusted electricians; some of us are fathers who also happen to be grill pros . We decided to offer up a few of our favorite Father’s Day-centric summer grilling recipes.
Bacon Wrapped Cheese Stuffed Burgers
Makes 6 Servings
Ingredients:
2 lbs. ground beef
¼ cup diced onion
1 teaspoon Italian seasoning
1 teaspoon salt
Pepper to taste
10 bacon slices
6 cubes cheddar cheese
12 toothpicks
- Combine the ground beef with spices and separate into 6 patties.
- Stuff one cheese cube inside each patty, and reform the patty until the cube is fitted in the center.
- Wrap each patty in bacon, and use water-soaked toothpicks to secure the bacon.
- Cook the patty about 5 minutes or until desired temperature, remove the toothpicks and enjoy!
Honey Chipotle Chicken Leg Quarters
Makes 6 Servings
Ingredients:
6 chicken leg quarters
1 teaspoon garlic powder
2 teaspoons chipotle powder
½ cup honey
2 tablespoons apple cider vinegar
Salt to taste
- Mix the honey, garlic, chipotle, and vinegar in a bowl, and stir until ingredients are fully mixed.
- Stir in salt with the sauce until desired taste.
- Place defrosted leg quarters in a freezer bag, then fill up the bag with sauce.
- Shake the bag until all leg quarters are covered.
- Place the bag in the fridge for about four hours.
- Remove the bag and grill the leg quarters about 10 minutes on each side.
- Use a food thermometer to check your chicken’s temperature.
- Once the chicken is at 165° Fahrenheit, they are ready to eat!
Ultimate Baked Potato
Makes 4 Servings
Ingredients:
4 large potatoes
Aluminum foil
1 cup shredded cheese
½ cup crumbled bacon
4 tablespoons butter
4 tablespoons sour cream
Salt and pepper to taste
- Wash the potatoes and remove any sprouts, then wrap them in aluminum foil.
- Grill the potatoes for about 40-45 minutes, turning them several times during cooking.
- Remove potatoes and unwrap the foil.
- Use a fork to open the middle of each potato.
- Fill the openings with butter, salt, and pepper, then add the cheese.
- Top off each potato with sour cream and bacon crumbs, and enjoy!
Grilled Steak Burrito
Makes 4 Servings
Ingredients:
4 strip steaks
4 flour tortillas
2 bell peppers
3 tomatoes
4 tablespoons sour cream
1 cup shredded cheese
4 tablespoons chopped cilantro
- Dice the bell peppers and tomatoes to preferred size.
- Grill each steak for about 3-4 minutes on each side, or until desired temperature.
- Remove steaks and chop into finely cut strips.
- Warm up the tortillas on the grill or stovetop.
- With the warmed tortillas laying flat on the counter, fill each one with steak, and add the bell peppers, tomatoes, cheese, and cilantro.
- Top off with a dollop of sour cream, and fold into a burrito shape.
